Paleo Eggplant Lasagna

Okay my Paleo pals, check out this fantastic dish from Esposita…

Paleo Eggplant Lasagna

  • In a baking dish, place sliced eggplant
  • Layered with grass-fed (I say grass-fed!) hamburger (from Central Market in Poulsbo)
  • Seasoned with garlic powder, fennel seed, and all-purpose seasoning
  • Topped with homemade maranera sauce (tomatoes, onions, garlic, and a touch of love)
  • A dusting of cheese over the top (this is the slightly cheating area for Paleo, but oh well)
  • Repeated with more eggplant and sauce
  • Baked in oven for 30 minutes (or so)

We’ve made this now many times since we started doing Paleo. This is really a creative, fun, and delicious way to eat lasagna!

Paleo is a healthy eating program that cuts out a lot of carbs like sugar, white potatoes, bread, flour, processed foods, and other stuff. Keep watching on this blog to find delicious dinners and desserts that are healthier for you!

My total transparency – Esposita is really doing great with Paleo. She is pretty hard-core. I consider myself an 80% Paleo guy. I gotta have dessert and bread sometimes!
