Baked Salmon Rocks

Yesterday at Easter celebration, my brother-in-law Dave, gave us some fresh salmon he caught himself. We didn’t wait long to let it go “un-fresh!”

I made a baked salmon for dinner. Here’s what I did…

I took the salmon fillet (about an inch thickness) and rubbed olive oil  all over it. I then added – salt, pepper, white wine, a touch of lemon pepper, rosemary, and alcaparas (aka capers).  Pre-heated the oven to 440 degrees and baked for about 15 minutes. Based on the thickness of your filet, keep checking how it’s cooking to avoid it getting dry. Many thanks to Esposita to helping me watch the color of the fish.
